Today I went to my second Physique 57 class tonight and promptly had my butt handed to me. I thought I was in shape, but good lord the chicas in that class must have muscles of steel… I couldn’t stop my thighs from shaking halfway through most of the exercises! Totally worth it though 😀 If you live in NYC or LA, you should definitely try it out!
How did I refuel after a hard workout? With roasted Butternut Squash and another amazing Veganomicon creation!
Escarole and white beans anyone?? It was all I could do to not eat this straight out of the pan… I tweaked the recipe just a tad because I happened to have some freshly roasted garlic on my hands.
- 1 head escarole (I chopped mine up a bit)
- 1 tsp or so of EVOO
- 6 cloves garlic, minced (mine was roasted garlic)
- 1/4 tsp red pepper flakes (or more!)
- 1/3 c. capers
- salt to taste
- 1 c. cooked white beans (I used butter beans)
I looove butter beans and caper so this was right up my alley! The escarole gets soft, yet not mushy and the capers add such an awesome briney flava to it all. Definitely will be making this again. I feel like this would be awesome used as a bruschetta-type topping if you chop up the escarole into smaller pieces too… hmm maybe my leftovers have that in their future.
I topped off the night with some delectable cocoa pudding using CCK’s agar pudding recipe. 1 tbsp agar flakes, 1 1/3 c. almond milk, almond extract, a dash stevia and a tbsp cocoa powder? Easy peasy and pure heaven!!

Good lord have I been MIA!! Not for long my friends… I have so missed posting my culinary creations and I promise not to keep disappearing. No, it won’t happen everyday, but that’s simply because between my job, planning my wedding (128 days until it’s here!), training for my 3rd marathon and trying to stay sane; everyday blogging is just out of the question. So here’s the deal… I make something yummy, I post. Works for you?
I figured since this was my first post of 2011 I should make this post about how I spent my New Years Eve, so here goes! The fiance and I came back from skiing early and decided to ditch the whole NYC NYE mayhem and spent it indoors. Which meant I had a lot of work to do! I decided in the spirit of the occasion to make a whole lotta party food! First up, BBQ Seitan Skewers and Texas Bean Sliders:
I actually made my own seitan for this using the recipe for seitan cutlets in Veganomicon (aka the vegan bible). I then cut the seitan into bites, slathered then with some Asian BBQ sauce I had and broiled then for a few minutes to firm up before putting on skewers. Those little guys were tender! For the Texas Bean Sliders I used another Veganomicon recipe with a few tweaks (I’ll post the changes I made later). I opted for mini sliders with avocado & tomato slices. For the bread I cut a portuguese roll into 6 pieces and cut out some of the middle white part for thinner “bun” halves.
Alongside the burgers & skewers I decided to add in some Vegan Caesar Salad after an amazing salad I had at the lovely V-Note in NYC. I made them utensil-free by serving them in radicchio leaves with tiny pita bread crutons (rubbed with garlic). Yes, the dressing was another Veganomicon recipe!! Clearly someone got a cookbook over Christmas…
I was rushing to do so many things at once, at one point I had to be reminded that we were the only guests, so I could chill a little… 🙂 It was so worth it though! As someone allergic to dairy (and a vegan 99% of the time) I def missed Caesar Salad and I loved the whole edible bowl part too!
I also made some Cauliflower-Hummus dip & veggie crudite from the wonderful tome of vegan-ness, but unfortunately those didn’t make it into the picture. Oh right and dessert? How about champagne and frozen strawberries!! I don’t know why, but I prefer when they’re frozen…
Hey guys… so I haven’t been cooking as much as usual, but that’s simply because I’ve been alll over the place recently. Yesterday I helped lead a group of 12 New Yorkers on a 9 mile hike and scramble through Breakneck Ridge in Harriman, NY as part of the Urban Escapes Spectacular Scramble. What is a scramble you ask? Technically speaking it’s free-climbing, or rock climbing without ropes. It’s a little scary, but so fun!
A few weeks ago the fiance and I went on the same hike HERE when we wanted to plan a trip out of the city. Well I loved it so much that I decided to apply to be a part-time guide and yesterday was my “guide applicant” trip to see if I was prepared for the job and I got it!! This morning I woke up uber hungry and wanting something nice and cool since I can already feel the heat outside so I decided to make one of Kristen famous Cherry Chocolate Bombs (with a few extra additions to speed muscle recovery and get in all my nutrients). I have become so addicted to these!! Check it.
This morning I wanted a little extra kick so I added a spoonful of instant coffee. Mocha Cherry Chocolate Bomb? Yes please!! The ingredients of this batch: water, spinach, kyo greens, sea salt, cocoa powder, vegan protein powder, maca powder, organic cherries, bananas and instant coffee. Have a relaxing Sunday guys. 🙂
Oy… today was one of those friends amigos. This is me going to my zen place… let’s just say that I have never needed a run so bad in my life! I thankfully brought my running gear with me to work because I decided to be uber green today and run the 8+ miles home from my office instead of use the subway. Blowing off steam + finding a more relaxing way home… two birds, one stone friends. Thankfully I started off my day with some raw-mazing Coconut Breakfast Cakes w/ blueberries a la Ani Phyo.
Seriously even if you aren’t in raw food you should tots check her out. Great recipes and just in time for summer when the last thing you want to do is turn on an oven or heat up a frying pan. Just add a drizzle of maple syrup and you have just entered 7th heaven (and I’m not talking about that show about the Camdens)
I found that when I used the amount of flax meal to coconut oil, water and agave nectar that the recip called for, it was a little too sticky to really roll into neat balls before pressing into disks, but I can’t say it really affected the overall flava. It really just gave me more stuff to lick off my fingers 😉
If you guys have trouble finding brekkies that fill you up in the a.m., I would suggest looking into to adding some flax into your diet. The high fiber + omega 3‘s really keep you satiated for hours! Just what I needed too on a day like today when I couldn’t exactly leave my desk. Ok lovies, off to read Eat, Pray, Love! I swear that book makes me want to go on a yoga retreat for reals.
Wow, today was a scorcher! I really wanted to go running today, but unfortunately I lounged around too much so by the time I was ready to get moving it was ridiculously hot & humid so I decided to kill some time by getting groceries and got back just as the mailman was leaving and what did I find in my mailbox? A gift certificate for Barnes & Noble from the lovely Gliding Calm! Thanks girlie, you totally made my day! 😀 I had won a raw cookbook giveaway on her blog a while back and there was a problem with the company that was supposed to send it, so she took it upon herself to sent me a little gift out of her own pocket. So sweet! What did I buy with my prize??
Ani’s Raw Food Kitchen… yessss! I’ve been drooling over this book in the bookstore for way too long, so I figured now was the perfect time to scoop it up. Plus, in this weather, who wants to cook? Peekay was intrigued as well…
After perusing the cookbook and lazing around the apartment I finally decided by 5:30 that I was going to run – heat or no heat. Mayyybe I should’ve taken water though. Sigh, hindsight is 20/20. I ended up doing 13 miles, with a few stops at various water fountains in the park (normally an ick factor for me, but when it still reads 86 degrees on the giant clock over Columbus Circle at 6pm you stop being picky). Unfortunately dehydration kicked in at mile 12.5 and the last leg was murrr-dah – sorry I have Nelly in my head apparently. I revived myself with a coconut water & protein smoothie at home and decided to stuff my face with a rockin’ snack plate a la Miss Gliding Calm.
Pita & hummus swirled with ungodly amounts of Texas Pete hot sauce, alongside a veggie plate & some homemade Balsamic vinaigrette for dipping. For the Balsamic Vinaigrette I blended 2 tbsp Balsamic vinegar, 6 tbsp olive oil, 1 tbsp honey, 1 tbsp Dijon mustard, 1 clove garlic – minced, and 1/2 tsp Herbs de Provence. It kinda rocked my face off. The wine I got was pretty awesome too! It was a Vino Verde that was tart, refreshing and had a bit of a sparkle to it. Ok, I’m outie. I’m all ready to watch the movie Dear John with Channing Tatum (my other fiance) and Amanda Seyfried.
Can we just take a moment here to appreciate the perfection that is Channing Tatum? Ok sorry… The real fiance is in Florida tearin up the golf course with two of his buddies, so I am taking full advantage of being able to watch girlie movies. 😉 G’night all!!
After putting off my swim on Wednesday to go running instead I finally decided to hit the pool last night. I think it’s important to switch it up every so often to reduce the pounding on my joints and the pool is the perfect thing for that. I was still a little sore in my right arm and back from golfing, but I knew that once I got going things would loosen up. Clearly it didn’t prove to be much of a hindrance because I ended up breaking my personal record for lap swimming. I finished a very tiring 48 laps, or 1.5 miles!! I really wanted to hit the 1.5 mile mark so I made a deal with myself that I could order dinner from my fav vegan eatery Candle Café if I hit the 1.5 mile mark. If that’s not motivation, I don’t know what is!
48 laps later I was happily walking the 20+ blocks home, stopping at Candle Café to pick up dinner. I love when the weather turns nice and I can avoid the subways and just walk everywhere! I got my favorite dish, the Ginger Miso Stir-Fry that has popped up on the blog before.
Check out those hearty chunks of tofu and delectable veggies… heaven. It’s all served over brown rice and is covered with just the right amount of a Ginger Miso dressing that I really need to figure out the recipe for!!
Since my workout was pretty grueling I knew the dish alone wouldn’t fill me up so I whipped up some Creamy Broccoli Soup – dairy-free of course! I don’t normally measure things out, but here goes:
Creamy Broccoli Soup (makes 1 hearty serving, easily doubled though!)
- 2 c. Water
- 1 ½ – 2 c. chopped broccoli, stalk included
- 1 clove garlic
- 1 tsp Better than Bullion – Veggie flavor (optional, but adds a nice flavor)
- 1 tsp nutritional yeast
- 2 tbsp raw macadamia nuts
- Dash of Spike Seasoning (optional)
- Salt & Pepper, to taste
First I brought the water to a boil in a small saucepan and then threw in the broccoli and garlic so that the water just covered all the veggies. I let this simmer for about 1-2 minutes (I like to keep the color & flavor of the broccoli pronounced) and then poured it into the Vita-Mix along with the nuts and seasoning. Blend on high for a few minutes until the nuts and broccoli have creamed together nicely, adding water to thin as desired.
I know it’s about 80 degrees out, but my a/c makes my apartment freezing, so it always seems like a good time for soup!
Do you guys ever get food cravings that go against the normal fare of the season – ice cream in winter / soup in summer?
Happy National Running Day!! Sorry for the break from posting, but I just got back from a mini vacation to Watch Hill, RI with the fiancé, older sister, brother-in-law and my brother-in-law’s family. Twas deliciously relaxing 😉 I spent my time running on the beach (and learned it kills your calves), walking around town, reading and learning to play golf! Um sadly I’m still sore from the 2-hour golf lesson on Monday, yet I’m totally fine from everything else… weird.
Anywho, I’m back and totally refreshed! This morning I had planned on going swimming after work, but when I learned it was National Running Day I felt I just had to hit the pavement. During my run I started thinking about my journey to where I am now… from a casual runner to a seasoned (well, 2 at least) marathoner! After my last marathon I made a pact with myself that I would not sign up for another race until I could comfortably run 13+ miles without feeling completely drained afterwards. Yes, I would love to run another marathon (and possibly a triathlon), but I don’t really like having to work my mileage from the ground up every time I compete. My last marathon I was coming off an injury so I literally had to work up from not running at all for two months to being race ready.
My goal this year is to be able to run 20 miles without having to change around my schedule or be left hobbling around after in order to do so. I am slowly upping my mileage, but if something comes up I’m not going to stress because I am not following a strict schedule. I know lots of people run marathons almost every year, and I guess I just want to see how easy it is to sustain the high mileage to make that possible.
After a refreshing 4 miler I hit the showers and then tried to figure out dinner. I settled on one of my new favs – dal! I added about 1.5 cups of frozen peas, 5 chopped plum tomatoes, and doubled the amount of chilies in my regular Dal Recipe. It rocked my world… just sayin’.
I think I added a little too much water this time, but it still tasted perfecto – I just had to eat it with a spoon instead of just sticking to the pita scooping method. Not only was this tasty, but it is such a cheap meal to make. Music to my ears!!
Someone was trying to scam on my dinner… 😉 Well I’m off to curl up with a good book and chillax. I just started the book Sudden Sea: The Great Hurricane of 1938 about the hurricane that totally rocked the northeast & specifically Watch Hill, RI back during the Great Depression and I am completely enthralled.
