A bountiful feast

Monday again… how does the weekend manage to fly by so fast??  After an exhausting morning participating in Spin for Survival yesterday, an all-day spinning event to raise money for Memorial Sloan-Kettering Cancer Center (my team raised over $5,000!!) I needed a good ol’ relaxation night in.  The fiance and I decided to do something reminiscent of college – a wine & apps night!  

I made a Dill-Tofu veggie dip with some silken tofu, salt + pepper, dill, and fresh garlic to go with the rainbow of vegetables.  

We also got some yummy Manchego cheese, bread, dolmades, and olive oil for the bread.  Yummers!

Someone was cheating at Scrabble… “qet” is not a word!!!  Although oddly “qat” is.  Oh well, I somehow still lost.  Hope everyone else had a great weekend!!
