One misty, moisty morning…

…when cloudy was the weather.  There I met an old man, all clothed in leather.  I ran through Central Park, my legs as light as feathers.

Does anyone remember that nursery rhyme??  Anyway, I had a great run this morning while it pretended to rain.  I love how peaceful everything is in the mornings.  The park is so full of runners and bikers, but everyone is just going along silently at their own pace… it’s very soothing.  When I got back I decided to get to work a little early and just pack my breakfast to take with me.  Of course, I couldn’t go without a big spoonful of ZAP peanut butter first.   😉

Taco Night!!

Last night was my favorite ever – taco night!!!  Ok, I know I said sushi was my favorite, but so are tacos… especially when they’re build-your-own.  I had the bf over for dinner so I made a mix of lots of dishes… diced tomatoes, sauteed peppers & onions, chopped lettuce, stir-fried tofu, stir-fried chicken, Mexican-mix cheese, and some plain Chobani yogurtin place of sour cream.  I got these awesome blue corn tortilla shells to go with everything.  They’re pretty small, but they’re freshly made so you just heat them up in a frying pan first.  They were sooo good! img_17331

Everything was marinated in a mix of chili powder, cayenne pepper, garlic powder, red pepper flakes, salt, pepper and tabasco sauce.  I looove spicy foods so I added some extra hot sauce on top of everything. 😛     img_17341I didn’t have very much chicken left in the freezer, so I let the bf have the chicken while I enjoyed my tofu.  I used firm silken tofu, pressed and then marinated in the above spices for about 10 minutes.  Then I added a little olive oil to a pan over high heat and seared these babies for about 5-10 minutes until they had a nice crispiness outside.  img_17361I had two of these suckers because they were soooo good!  Sorry, I know I’ve gotten a little sloppy on my pictures lately.  This came out wayyy blurry.  Maybe the 2 corona’s w/limes that I had weren’t helping the steadiness of my hands though    😉

    I love taco night, the roomies and I used to have taco tuesdays and invited everyone over, college tacos were the best!!!

    YUMMY. Haven’t had a taco in forever. I am definitely in need of a taco right now.

    We picked up a box of the peanut butter puffins at Whole Foods this past weekend and tried them last night…not too bad! So glad they’re not super sweet. I’d like to try the cinnamon puffins next, they seem to be a big hit for many bloggers. 🙂

    Lindsey Glad you tried the PB puffins! I actually prefer those over the cinnamon because I like to eat my cereal dry. The cinnamon are yummy, but definitely need some milk along with them.

    I am in love with your tofu tacos.

    I miss Central Park a lot. I used to live two blocks over (Columbus Ave) and walked through it almost everyday to get to work!
