Banana Oatymeal

In commemoration of the new blog, I thought it would be only fitting to start it off with a recipe for my favorite breakfast in the world – Oatmeal! 😀 I have just recently become addicted to a new kind of oats with bananas cooked into it thanks to KERF. If you’ve never tried this I definitely suggest you hop on the bandwagon…

Here’s the recipe:

Banana Oatymeal

  • 1/3 cup rolled oats
  • ½ cup water
  • ½ cup skim milk (I like to use skim plus)
  • ½ medium banana
  • ½ tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp powdered ginger
  • Pinch salt

Start by combining 1/3 cup rolled oats, 1/2 cup water, and 1/2 cup skim milk in a saucepan over medium heat. Slice a banana into VERY thin pieces, leaving just a few bigger chunks. As the oatmeal heats, stir vigorously at times to “whip” the banana into the oats. The oats will take 5-7 minutes on medium heat to fully absorb the liquid. They’re done when they reach your desired consistency! Then stir in the vanilla, ginger, salt and cinnamon and pour into a bowl. Add any toppings you like, such as almond or peanut butter, toasted walnuts or granola.

**I like my oatmeal a little soupier than most, so if you don’t prefer this just reduce the water and milk to 1/3 cup for each.

    I. LOVE. THIS. STUFF.! KERF really brought it to life-I think we all owe her a huge thank-you! I love her idea of putting it on the spoon, too! Oatmeal just seems so plain to me now if I don’t add banana and peanut butter. The PB is so nutritious and I feel so great when I eat it! It really holds me over, too.

Oh my gosh I couldn’t agree more!! I used to always just make my oatmeal with milk and salt (I LOVE salty things), but this is soo much better and def holds me over better. I used to hate looking at the clock at 10:30 and wondering why it wasn’t lunchtime already!
