Oh. My. Gosh. So this morning after my bikram yoga class I decided to make a smoothie as usual, but was bored of my normal flavors. So what did I do? Hopped over to my girl CCK’s blog to test out of of her milkshake flavors. The choice was easy… mint chocolate chip ice cream was allllways my fav growing up (even if I did have to eat lactaid pills before I could eat it). These days though I’ve shunned dairy altogether due to allergies and well just not liking the whole process behind how it’s produced. This smoothie brought me right back to my childhood though! I made a few small adjustments off the original recipe based on what I had on hand. I also wanted more of a pudding consistency so I could eat it with a spoon, so I added in a healthy dose of xantham gum and some psyllium husk. Here it is pre-blending:

I love, love love this! And it’s even a little sinful bc I was out of cacao nibs so I added some Rice Dream dairy free chocolate chips So sinfully delicious (ok, it’s actually not sinful at all) it could almost be dessert! Here’s my tweaked recipe:
Mint Chocolate Chip Pudding (since it’s probs too thick for a straw)
- 1/2 banana
- 1 c. unsweetened coconut milk
- tiny dash salt
- tiny dash stevia powder
- handful of baby spinach
- 1-2 tbsp dairy-free chocolate chips
- 1/2 tsp xantham gum
- 2 tsp psyllium husk powder
- 2 ice cubes
- 2-3 drops peppermint extract
- 1-2 drops coconut extract (I LOVE coconut)

Hey guys… so I haven’t been cooking as much as usual, but that’s simply because I’ve been alll over the place recently. Yesterday I helped lead a group of 12 New Yorkers on a 9 mile hike and scramble through Breakneck Ridge in Harriman, NY as part of the Urban Escapes Spectacular Scramble. What is a scramble you ask? Technically speaking it’s free-climbing, or rock climbing without ropes. It’s a little scary, but so fun!
A few weeks ago the fiance and I went on the same hike HERE when we wanted to plan a trip out of the city. Well I loved it so much that I decided to apply to be a part-time guide and yesterday was my “guide applicant” trip to see if I was prepared for the job and I got it!! It was so much fun despite the torrential downpour that lasted for a little while. Urban Escapes has offices now in NYC, Philly, D.C. and Boston… check it out and Get Out Of The Bubble!!
This morning I woke up uber hungry and wanting something nice and cool since I can already feel the heat outside so I decided to make one of Kristen famous Cherry Chocolate Bombs (with a few extra additions to speed muscle recovery and get in all my nutrients). I have become so addicted to these!! Check it.
This morning I wanted a little extra kick so I added a spoonful of instant coffee. Mocha Cherry Chocolate Bomb? Yes please!! The ingredients of this batch: water, spinach, kyo greens, sea salt, cocoa powder, vegan protein powder, maca powder, organic cherries, bananas and instant coffee. Have a relaxing Sunday guys. :)
Big news… I finally got a Vita Mix 5200 and have to say – it’s pretty amazing. I had an awesome pilates session at Equinox this morning, (which I had never tried before and was really pleasantly surprised) and came back famished. I made a quick lunch, but was really just eager to get to dessert. What did I make?
Peanut Butter Cup Ice Cream!! Yup, that’s right… Ben & Jerry’s eat your heart out. Dairy-free and insanely delicious. I have been waiting so long for the opportunity to make Vita Mix ice cream after seeing it on other blogs and was so psyched to try out my recipe. I sorta followed the recipe in the Vita Mix cookbook for “Nut Freeze” with a few tweaks.
- 3/4 cup roasted peanuts, shelled
- 1/2 cup unsweetened almond milk (I used unsweetened Almond Breeze)
- 2 tbsp agave nectar, or more to taste
- 3 cups ice cubes
- 2 dark chocolate truffles, chopped (I made truffles over xmas so I used some from my freezer – you could use any chopped chocolate for this though)
Add the peanuts, agave nectar and almond milk into the Vita Mix and blend on Level 1 for about 30 seconds. Next add the ice cubes (I think I would add less ice next time) and blend for about 30-60 seconds, pushing everything down into the blades. I added the chocolate chunks afterwards by folding it in with a spatula, but I think it’s be nice to add about half to the actual ice cream towards the end of blending. I threw it in the freezer afterwards to firm up for a little bit, but got a tad impatient so I ate it while it was still a little melty. The fiance thought it was good, but could’ve used a bit of sweetness, although I don’t have much of a sweet tooth so it was perfect for me. Enjoy!
Today is totally feeling like a Friday to me since my boss gave me the day off tomorrow! Woohoo.. thank God it’s Tuesday! I know it’s all gross and rainy in the city today, but nothing can ruin the good mood brought on my a 2-day work week… I got up for my run this morning, completely unaware that it was raining, but once I got outside I figured what the heck, I’m already up and dressed so I was off. I think I ran extra fast today in an attempt to dodge the raindrops. I was really surprised to see so many runners in the park though! I guess I’m not the only crazy morning runner… Even though it was wet out, it was actually a great day to run because it was 46 degrees outside and plus I had my new Oikos beenie to keep me warm. Pile on the Miles = 45.44 mi.
When I got back I was totally craving something warm and sweet so I heated up a delicious bowl of Banana Oatymeal to which I added a pinch of Stevia for extra sweetness since I’m out of vanilla, and then topped it with a few chocolate chips! The chocolate chips were so rich and delicious – they’re the Ghiradelli ones I won from Erica of Itzy’s Kitchen for my BSI win!
Along with my oats I had the leftover 1/2 latte I had sitting in my fridge (I hate wasting food) sweetened up with some Stevia. I really like cold coffee… or should I say lattes. I can’t have large amounts of caffeine at one time, but I love little sips here and there.
