After catching up on some of your lovely bloggies I realized that I haven’t posted an update on my December Challenge yet. No I’m not hosting a contest or anything, this is just a personal challenge I decided to start after Bobbi’s “Pile On The Miles” challenge. Basically I just want to beat my 63.57 total mileage from the POTM challenge during the month of December. I’ll be totaling all the miles I run or walk from December 1st – December 31st. Well, not all the miles I walk because I’m not counting the walk to and from the subway on my way to and from work every day… that just seems obsessive to me. Basically if I go on a long 2+ mile walk and can track the mileage then I will add it – if not it’s not going to get counted. So… total mileage as of 12/09 is: 20.46 miles. Not too shabby, but if I want to beat 63.57 I’d better start hitting the pavement! The plan is to run in the a.m. the rest of the week, but we’ll see how that goes since I have a holiday party at the Plaza Hotel for work on Thursday (excited!!).
Lunch today was some leftovers from last night… diced Rosemary Roasted Acorn Squash over some brown rice. I also had a strawberry Chobani and a massive Macintosh apple (same pic from yesterday guys, sorry… I know, it’s kind of a boring sounding lunch, but I refuse to buy groceries this week. Between Christmas gifts, semi-mandatory office $$ donations, rent, etc. I am feeling the economic state of our country. Boo to that!! You will see lots of food being used up from my pantry and fridge this December!!
I came home today to two lovely packages… the first package was another box of Chobani!! To be fair I let them know that they had already sent me a box, but Tiffany at Chobani is apparently very aware of how much I love her lovely yogurts.
I whipped up a fabulous Swiss Chard Pie for dinner and popped it in the oven to cook. It’s not really pie, more like a Swiss Chard souffle over a delicious crispy gluten-free bottom crust. I’ve never made it on my own though so I was a little nervous…
Since it takes almost an hour to cook I decided to whip up a batch of chocolate snap cookie dough for some Faux-Reos I’m making for Christmas. This is part of Christmas task #1. I get incredibly excited about Christmas if you haven’t noticed…
When my Chard Pie was ready I dug in… so insanely delicious! Swiss Chard wasn’t on sale, so I subbed in spinach. I guess it was technically Spinach Pie… Regardless, it was sooo good. Afterwards I had a nice bowl of popcorn while catching up on yesterday’s Gossip Girl and Privileged.
Off to do more Christmas crafts!! G’night moon!
Well today certainly got off to a great (if not rushed) start. I hit the gym and did the ET for a change for about 30 minutes, followed by some light arm and abs work. All in all, a good workout! I have to say though, I am really missing running outside. Maybe this weekend I will be able to fix that…
For breakfast I had blueberry Chobani and a bag of PB Bumpers which I plan on eating when I get to work. After today, only 2 yogurts left from my free sample package… sad!! Well, you know what will be on my next shopping list. I just don’t know if I can go back to normal, runny yogurt. This stuff is soo thick, I swear my spoon can almost stand up by itself in the middle of it! I encourage anyone who hasn’t tried it to run to their store and grab a container (or five) and give it a shot! You won’t be dissapointed. I promise! While I was eating I had a guest come to join me. Peekay’s usually unphotographable because he never stops moving, but for once I was able to capture him on film! Have a good morning everyone!!
