Brinner!
After feeling totally rundown at the end of work, I came back, made the brother some Fried Rice with
Chicken and got a second wind. While I was cooking I snacked on a cup of frozen grapes and 2 Mother’s rice cakes… totally delicious!!! You can literally see the cheese on top – plus they’re all natural.
Could I have maybe just been getting the 5 o’clock itch?? Of course it may have had something to do
with the fact that Peekay wouldn’t let me snooze this morning. I suppose it’s a bit like having a small child – you only sleep when they sleep. Anyway, I took my newfound energy down to the gym for a quick warm-up on the treadmill and then some crunches holding dumbbells against my chest and lunges with dumbbells in hand. Nothing too spectacular, but I seriously can’t tell you how much it cleared my mind.
I came back upstairs trying to rack my brain for what I could make for dinner. I hadn’t defrosted any chicken, had given my rice and poached chicken to the brother, wasn’t in the mood
for a veggie burger, soup, or any other prepared meal. Then I remembered – I had some lentils in the fridge that I cooked yesterday for part of my lunch that I could eat. I did a quick inventory of what was on hand and came up with a new take on “Brinner” (bfast for dinner for all you Scrubs fans) I call this concoction Lentil “Hash Browns” & Eggs:
Green salad w/ carrots topped with the rest of my homemade hummus (and some red wine vinegar as well). On a separate plate I made a bed of lentils, steamed carrots and steamed sweet potatoes (I was pre-cooking these for tomorrow night’s special dinner for the bf). I added in a tiny bit of minced garlic, salt and pepper, and heated it up in a pan. While that was warming I fried up an egg to serve over top. I ate this with some ketchup & a dallop of the Roasted Garlic-Carrot Cayenne Sauce (it’s HOT!). I was a little nervous about the flavors at first, but it ended up tasting soooo yummy!! Definitely something I’d make again.
I am sooo tired, I’m going to bail on watching the office tonight and go to bed as soon as I finish posting. Of course, I made sure to next T so that he can dvr it and watch it with me tomorrow while we sip some wine and eat the yummy dinner I have planned for him. Hasta mañana todos!
Lunching in style
Lunch with underwriters turned out to be quite tasty! I would argue that the prices are a bit inflated ($30 for lunch salad – do dessert or appetizers??), but hey it’s New York… and more pointedly TriBeCa. The inside of the place was definitely really cool though – perfect place for a relaxed business lunch. 
Now I know I’m supposed to be avoiding wheat, but they had the most Amazing rosemary-herbed rolls. They had chunks of sea salt baked into the crust and were super light and buttery on the inside (oh how I love salty foods)… I got the Waldorf-Chicken salad with the honey-Dijon vinaigrette. It was veryfilling – they gave me tons of the freshest tasking sliced chicken and candied walnuts. I left a few of the walnuts in the bottom of the bowl though because they were a little sweet for my liking… not such a huge sweet tooth. However, after lunch they gave us a plate with 1 tiny coconut meringue for each person that could convert any sweet hater. Oh my gosh – so light, so fluffy, so sugary!! If only I could’ve taken a picture of them. They looked like mini porcelain jewelry boxes… ahhh so good! I’m so ready for a nap though – my stomach is full! A little sad my own lunch from home got put on hold, but hey, a free lunch at a nice restaurant – why would I pass that up??
A living, breathing alarm clock.
Oh man… today opened up with a bit of a rough start for me! I was woken up by the little kitten at 6:30, meowing to let me know that my alarm had just gone off. I didn’t go to bed at the greatest time though last night so I decided to sleep in (no gym for me this morning) - only problem was Peekay did not want to sleep in. The meowing continued until I had to get up and put him in his crate, where he finally calmed down and went back to sleep. When I finally did wake up at 7:15 I didn’t feel any more refreshed than I had at 6:30. I guess I may as well have just gotten up in the first place!
For breakfast I just grabbed the easiest thing – a container of plain yogurt mixed with Hemp protein powder that I had put in the fridge last week. Not as fun as oatmeal, but I needed to eat and get outta the door fast!
Once I got into work I had two massive cups of English Breakfast tea with 2% milk and Stevia. I also pulled out some grapes that I had tucked away in the office freezer.
Today I packed a fantastic lunch, but it looks like it might have to hang out in the fridge until tomorrow… I just got invited to a lunch with some underwriters at City Hall New York in Tribeca. I was peeking at the menu and there are so many yummy choices!! I’m only sad that I don’t have my camera so I can’t take any pictures for you guys. Oh well…
Thought I’d leave you with a little brain food (since my breakfast leaves much to be desired today).

Ahh sorry… work got in the way! One of my colleagues were nice enough to pick me up a skim latte from Starbucks though (unfortunately they heavily sugared it, so I’m not going to finish it – oh well, the thought that counts).
